1 ½ cups short grain white rice
2 X 284 g boxes Rock Harbour pre-fried coconut shrimp
2 tsp sweet chili sauce included in box, or sambal oelek
Finely grated zest of 1 lime
2 tsp lime juice
½ cup runny honey
¼ tsp salt
4 green onions, finely sliced
Lime wedges to serve
Cook rice according to packages directions.
Follow package directions to prepare Rock Harbour pre-fried coconut shrimp using your preferred method. Save sauce packet for another use.
Meanwhile, stir together sweet chili sauce, lime zest and juice, honey and salt.
Turn rice out onto a platter, top with shrimp, then drizzle with honey mixture. Sprinkle green onions overtop and serve with lime wedges and steamed baby bok choy if you like.
