Gingery Citrus Salmon

Ingredients

1 lb Rock Harbour fresh Atlantic salmon fillet, about 1 lb

Salt & pepper

1 tbsp olive oil

¼ cup fresh orange juice

2 tbsp fresh lime juice

1 tbsp honey

1 tsp finely grated ginger

2 green onions, thinly sliced

Directions

Cut salmon into two equal size pieces. Season lightly with salt & pepper.

Heat oil in a non-stick skillet over medium-high. Cook salmon 3 minutes per side. While salmon is cooking, stir together orange juice, lime juice, honey, and ginger.

Remove salmon to two plates and return skillet to heat. Tip in orange juice mixture and let bubble 30 seconds. Add onion and boil 15 seconds longer. Remove from heat, season with salt and pepper to taste, and spoon over salmon filets. Serve with quinoa or couscous and your favourite vegetables.
