Seafood Boil

Ingredients

The Boil:

Water

2 lemons, sliced

2 garlic heads (1 if large), halved

1 onion, roughly chopped

1 lb baby potatoes

2 bay leaves

2 Rock Harbour Snow Crab Legs

6 Rock Harbour Lobster Claws and Arms

6 Rock Harbour Pre-Slit Spiny Lobster Tails

16 Rock Harbour Scallops

1lb Rock Harbour Black Tiger Shrimp 

1lb Rock Harbour Clams 

Boil Broth Seasoning (see recipe below), divided

Salt to taste

Hot sauce (optional)

Boil Broth Seasoning:

2 tbsp smoked paprika

3 tbsp old bay seasoning

2.5 tbsp salt 

1 tbsp brown sugar

1.5 tbsp black pepper

½ tbsp dried thyme

Garlic Butter:

1lb unsalted butter

10 garlic cloves, minced

3 tbsp boil seasoning

1 tbsp smoked paprika

2 tbsp old bay seasoning

1.5 tbsp lemon pepper

¼ cup fresh parsley, chopped

½ lemon, juiced

Directions
  1. Combine boil seasoning ingredients in a bowl and mix well. Set aside.
  2. In a saucepan over medium heat, melt butter then add garlic cloves. Sauté for 2-3 minutes. Add the remaining spices (3 tbsp boil seasoning, paprika, old bay, lemon pepper, and parsley) and stir until well combined. Add lemon juice and set aside.  
  3. For the boil, fill a large pot with water and boil over high heat. Add garlic heads, onion, bay leaves, and lemon slices. Add in remaining boil seasoning and stir well. 
  4. Add in potatoes and let cook for 7-8 minutes. Next add in lobster tails and let cook for another 2 minutes. Add in clams and let cook 2 minutes. Add in crab legs and let cook another 2 minutes. Add in lobster claws and arms, shrimp and scallops and cook for 3 additional minutes. 
  5. Drain boil then serve with garlic butter.
