Ingredients

1 box - Rock Harbour Pre-Fried Torpedo Shrimp

1 box - Rock Harbour Pre-Fried Popcorn Shrimp

1 box - Rock Harbour Pre-Fried Coconut Shrimp

2 bags - Rock Harbour Spiny Lobster Tail Meat, thawed

2 bags - Rock HarbourCanadian Lobster Claws & Arms, thawed

1 tray - Rock Harbour Cocktail Shrimp tray, thawed

4 tbsps - Mayo

Juice from 1 lemon

2 tbsps - Chives, chopped

Hot sauce (optional)

Mini Brioche Bread Rolls

Fresh Dill

Butter

Tower Garnishes

Rock Salt

Bamboo Cones

Ice

4-6 Boston Lettuce leafs, cleaned and dried

2 Small bowls for dipping sauces

Lemon Wedges

Directions

Pre-Fried Shrimp cones:

  1. Preheat oven to 425ºF.
  2. Remove all pre-fried products from packaging and place shrimp in a single layer on a baking sheet lined with parchment paper.
  3. Bake for 15-20 minutes turning half way through until cooked or golden brown.
  4. Using the sweet Thai chilli sauce packs that come with the pre-fried shrimp, mix with 2 tbsps of mayo, a squeeze of lemon juice and hot sauce(optional).
  5. Fill top tier of tower with rock salt and place bamboo cones filled with a mix of all the shrimp into the salt. Place dipping sauce in a small bowl near by.

Mini Lobster Rolls:

  1. Thaw and cook Spiny Lobster tail meat in boiling water until fully cooked.
  2. Strain and roughly chop meat.
  3. In a bowl, mix together lobster meat, 2 tbsps of mayo, chopped chives and lemon juice and set aside.
  4. Butter and lightly toast brioche buns in a frying pan.
  5. Fill buns with lobster mix and top with fresh dill.
  6. Fill middle tower tier with ice and place lettuce leafs on top. Place your lobster rolls on the leafs.

Lobster Claws & Arms and Cocktail Shrimp:

  1. Remove Claws & Arms from packaging straining all the liquid.
  2. Fill bottom tower tier with ice and place lobster directly on the ice.
  3. Remove packaging from Cocktail Shrimp tray and place shrimp directly on ice.
  4. Pour cocktail sauce into a small bowl and place on ice near the shrimp.
